Chunky Gazpacho Recipe

spruce creek drink mixes, 2014, brands of promiseWith a summer bug beating us down here at Tequila Aficionado HQ, we’ve been leaning heavily on the cayenne to keep us clear for work.  Today, we pulled out the big guns.

It was time to make Gazpacho!  Ours is a bit different than your mother’s gazpacho though.  We made ours chunky (no puree necessary) and we used Spicy V8 and Spruce Creek Bloody Mary Mix for the base.

The Spruce Creek Mixes (Brands of Promise Award Winners for 2014) are delightfully versatile as soup and sauce bases, sangrita, and even the drinks they were originally intended for.  (We are particularly fond of the Avalanche Habanero.)  If you’re in Colorado or Texas, do yourself a favor and stock up on all the varieties.  They’re outstanding.

Chunky Gazpacho Ingredients

  • spruce creek drink mix, gazpacho3 cups spicy V8 juice
  • 4 tomatoes, diced
  • 3 cucumbers, diced
  • 1 onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 1 jicama, diced
  • 2 cloves crushed garlic
  • Juice of 1 lime
  • 2 jalepenos, seeded and diced
  • 1 bottle Spruce Creek Bloody Mary Mix

Directions

2015-06-23 14.51.18Add all chopped vegetables, garlic, and lime juice to a large bowl (I had to use a large crock pot because it was the biggest one I had).  Mix thoroughly.  Add Spicy V8 and stir.  Add Spruce Creek Bloody Mary Mix until liquid rises to the top layer of vegetables.  Stir well.  Chill for at least two hours.
